Kersiekoekies

Fruit Squares/ Cookies

The following recipe is for these tasty little squares/ cookies. They were baked and given to us when Calvin was born. I had never tasted anything quite like them. I've since learned that the recipe is from South Africa (where the woman that gave them to us is from). When my mom was out she had some and loved them, as did we. Anyways, here's the recipe, thanks Krista!

1 packet (300gm) Simple Pleasures Social Tea Biscuits (Pink box) - break in small pieces

200 gm margarine
1 cup sugar
1 cup glazed cherries
1 cup seedless raisins, melt in big pot and cook for 5 minutes, remove from heat

2 beaten eggs
2 tsp vanilla, add, return to heat and cook another 5 minutes.

Remove from heat, add cookies and mix well.
Press flat with greased spatula into a dish of 20 X 30 cm.
Let cool down in freezer and cut in squares. Keep refrigerated or frozen.
